Simmer: To Prepare: Wash: the lentils with cold water. Lentils do not need to be soaked. Cook: Use a heavy pot, add water about 2-1/2 to 3 times the amount of lentils, and sea salt. Cover, bring to a boil, reduce heat to a low-medium and simmer for about 50 minutes. Let sit covered for 10 minutes. Put in serving dish and garnish with minced parsley and/or chopped scallions. Note 1/2 cup dry lentils = 1-1/2 cups cooked.
