Wash and dry the fresh produce.
Juice lemon into a small bowl, then measure out a 1/2 fl oz (1 tbsp) juice and place in a mixing glass. Set aside. (Reserve remaining lemon for another use.)
Roughly chop tomato (you should have about 3/4-cup). Place in a blender.
Trim and roughly chop green onions. Add to the blender along with 6 fl oz (3/4 cup) tequila. Pulse several times until finely chopped but not puréed. Set aside to allow the flavors to blend, 2 minutes.
Working in batches if necessary, strain tequila mixture into the mixing glass, pressing on the solids with the back of a spoon to extract as much juice as possible. (You should have about 1 cup of tequila mixture.)
Add ice, 1 fl oz (2 tbsp) vermouth, 1/2 fl oz (1 tbsp) olive juice (from the jar), hot sauce, and salt to the mixing glass. Stir until well chilled, about 30 seconds.
Strain cocktail into martini glasses or glasses of choice. Thread olives onto mini skewers or toothpicks. Carefully arrange over the rims and enjoy!
