Pear Compote
Winter pears, simmered slowly with honey, spices and vibrant citrus juice and zest, give this compote its pleasing texture and wonderful flavors and aromas. The succulent, sweet D'Anjou pear and the subtly tart Bosc are both delicious when cooked, making either pear the perfect choice for fruit compote. Yields 4 Cups |

In a large saucepan, cook the pears, lemon juice, lemon zest, honey, cloves and cinnamon over moderate heat, stirring until liquid begins to release from pears and starts to simmer. Simmer mixture, stirring occasionally, for 35 minutes, making sure not to scorch the bottom of the pan. Continue stirring for an additional 10 minutes or until mixture is thickened. Add currants, stir, and partially cover pan for 15 minutes. Turn off heat. Transfer to a bowl and chill. Compote will keep (covered and chilled) for 1 week. |
