Dee Andronico's Herb Dressing
With the incorporation of fresh apples, golden raisins, crunchy walnuts, and Kassen cheese, Dee's Herb Stuffing offers a tasty twist on the classic tried and true stuffing. Yields 4 Servings
Ingredients
1 (14-16-ounce package) Pepperidge Farm Stuffing Mix
1/2 cup golden raisins, soaked
1 cup chopped onion
1 cup chopped celery
1/4 cup grated carrot
1 stick clarified butter
4 tablespoons chopped parsley
1 Red Delicious apple, peeled, cored and chopped
1/4 cup walnuts, coarsely chopped
1/4 cup Kasseri Cheese (or Parmesan)
1 cup chicken stock
Directions
1 Soak raisins in hot water for 30 minutes, to plump. Drain. Saute onion, celery and carrots in butter until mixture sweats. Add the chopped parsley.
2 In a large bowl, combine all ingredients except chicken stock. Moisten ingredients with the chicken stock until desired consistency is reached. Use to stuff your turkey, or bake in a casserole dish in a 325F oven until the stuffing is crispy on the outside.
