    We carry many great varieties of caviar at Andronico’s, but our Tsar Nicoulai Sturgeon Caviar comes from a sustainable sturgeon farm located in California’s Central Valley. With over 40,000 sturgeons at the farm, each fish is fed a diet of organic feed, free of antibiotics and hormones.  With help from researchers at University of California Davis, the farm is ecologically sound and has a state-of-the-art filtration system, as well as a natural hydroponics pond. When the sturgeons are mature enough to produce caviar, it is then harvested on-site before shipping to a production facility in San Francisco. The caviar is then processed using very little salt, a traditional process known as “malossal.”  The end result is a wonderfully fresh taste with a buttery smooth finish. This delicious delicacy is available through the holidays at Andronico’s Community Markets.
