OR THREE generations, since 1912, Boni Company has been producing some of the world's finest handcrafted wheels of Parmigiano Reggiano on the historic hillsides of the Parma region of Italy.

For true cheese lovers, there are few experiences that match the pleasure of savoring a perfectly aged, freshly cut slice of Parmigiano Reggiano. One of the three or four incomparable cheeses of the world, this is the center jewel in the crown of Italy's food tradition, one that dates back to before the thirteenth century. Handcrafted by artisans and carefully rubbed, turned, aged and cared for, each wheel is an expression of the cheese maker's dedication, as well as their passion and love for the culinary legacy of the region.

For 96 years, the Boni family has been grazing and milking their Frisona cows on the verdant western slopes of the rolling Parma hillsides. The cows eat a rigidly controlled diet of local grasses and plants.

Parmigiano Reggiano is an all-natural, handmade product, created using only milk, curd, and salt. Each wheel receives an origin trademark, a D.O.P., and if it passes a "highest quality" test, it receives an additional selection trademark, the oval brand. Normal aging occurs over a span of 24 months, however an additional six months of meticulous aging gives the Boni family's cheese a big personality.

This cheese, aged for 30 months, is for connoisseurs, and will require your palate a moment of concentration to be fully realized. True perfection. Savor Boni Mountain Parmigiano Reggiano with a drop of aged balsamic vinegar; at the end of dinner with an important full-bodied red wine like an aged red Porto; or as an appetizer with a sumptuous sparkling wine.
