N THE famous Beemster polder of the Netherlands, something unusual takes place on April 2. Barn doors are opened and cows race out, kicking up their heels, enthusiastic to feast on fresh spring grasses. After being in the barns all winter, dairy cows are more than ready for the fresh grass-and it shows! So spectacular is this day, that it is a local holiday for the residents of the Beemster polder. Children have the day off from school to celebrate the arrival of spring, and learn to appreciate the importance of the environment. Soccer games can often be seen throughout the day in the pastures, as the cows enjoy the fresh grass while farmers and local residents picnic and enjoy the fresh spring air. These very rare wheels are only made from the first milks that the Beemster cows give after feeding on the fresh spring grasses.
